BYU MINT BROWNIES

A rich brownie dessert with creamy mint frosting and chocolate topping, famous by the BYU creamery.

Ingredients

  • 1 cup butter
  • 1/2 cup cocoa powder
  • 1/2 cup honey
  • 4 unit eggs
  • 2 cup white sugar
  • 2 cup flour
  • 1/2 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans
  • 10 tablespoons unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons light corn syrup
  • 1/4 cup milk
  • dash unit salt
  • 1/2 teaspoon peppermint extract
  • 1-2 drops green food coloring
  • 1/3 cup cocoa

Directions

    Preheat oven to 350 degrees. Melt butter and mix in cocoa. Allow to cool. Add honey, eggs, baking powder, and salt. Mix well. Add nuts. Pour batter into a greased or parchment paper baking pan. Bake at 350 degrees for 20-25 minutes. Cool completely.

    Prepare frosting: In a medium bowl, beat butter, powdered sugar, and corn syrup until combined. Beat until fluffy. Add more milk as needed until frosting is thinner than cake. Divide frosting in half and make one mint and one chocolate. Take half of the frosting and beat the remaining in the bowl will be the chocolate.

    Mint frosting: Stir in the peppermint extract and green dye by hand or with a mixture. Spread from the freezer and carefully add a layer of chocolate frosting.

    For the Chocolate Frosting: Add cocoa. Mix until smooth. Spread chocolate on top of brownies. Refrigerate until firm. Cut into squares and serve.
