Southern Potato Salad
A classic Southern potato salad made with potatoes, eggs, mayonnaise, and traditional seasonings.
Ingredients
- 3 pounds potatoes
- 3 tablespoons plus 1 teaspoon salt, kosher
- 3 unit eggs, large hard-cooked
- 1 cup onion, cup chopped
- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 2 tablespoons dill pickle relish
- 1 tablespoon onion powder
- 1 tablespoon red wine vinegar
- 1/4 teaspoon black pepper, ground
- 1 tablespoon dill, chopped fresh
- 1 tsp Salt

In a large Dutch oven, add potatoes, 3 tablespoons salt, and water to cover.

Bring to a boil over high heat; reduce heat to medium. Cook until tender, 13 to 20 minutes. Drain and let cool completely

In a large bowl, gently stir together potato, egg, and celery. In a small bowl, whisk together mayonnaise, sour cream, relish, onion, vinegars, remaining 1 teaspoon salt, and pepper. Add mayonnaise mixture to potato mixture, stirring gently to combine. Serve immediately, or cover, and chill up to 24 hours. Garnish with fresh dill before serving, if desired.
