Breakfast Sausage and Egg Casserole
A savory breakfast casserole made with sausage, eggs, cheese, and vegetables baked until set.
Ingredients
- 1 lb breakfast sausage
- 10 unit eggs
- 1 cup liquid egg whites
- 1 1/2 cups low-fat cottage cheese
- 1/2 cup nonfat plain Greek yogurt
- 1 1/2 cups shredded sharp cheddar
- 1 cup diced bell peppers
- 1/2 cup diced onion
- 1 cup chopped spinach
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 1 unit salt & pepper

Heat oven to 375°F. Grease a 9x13 dish.

Brown sausage, drain grease.

Add peppers, onion, spinach; sauté 2-3 min.

Whisk eggs, egg whites, cottage cheese, yogurt.

Stir in cheese, seasonings, sausage mix.
