Directions

  1. 1

Cut 1 pound of bacon chopped in a large skillet on medium heat. Once about 3/4 cooked through add 1/2 a diced onion and cook until the onion is translucent and the bacon is crispy. Remove the bacon and onions from the pan and let drain on some paper towels. Leave the bacon grease in the pan.

  2. 2

Take 1 1/2 pounds of chicken and cut into small bite size cubes. Season however you would like. I used rotisserie chicken seasoning and buttery steak house seasoning. Then add 3 tablespoons of corn starch and mix well. Now add that chicken to the skillet with the bacon grease. Cook at medium to high heat for 3 minutes on both sides. Then toss around another 30 seconds or so. Remove the chicken from the pan.

  3. 3

Now add 1 carton of low sodium chicken broth to the skillet and 1 pound of pasta. Raise the heat to a high and once that starts boiling cook around 8 minutes or until liquid is gone and pasta is cooked through.

  4. 4

Now set heat to low and add 1 cup of heavy cream. Stir and add 1 cup of shredded cheddar cheese mix until melted then add another cup of shredded cheddar cheese and mix again until melted.

  5. 5

Add your bacon and chicken back to the skillet and toss up.

  6. 6

    Enjoy!
