Bowtie Chicken Salad

A pasta salad made with cooked chicken breasts, bowtie pasta, and fresh vegetables tossed in a light vinaigrette dressing.

Ingredients

  • 6 unit Boneless skinless chicken breasts cooked & diced
  • 1 box Bowtie pasta cooked
  • 2 cups Red grapes diced
  • 1 c Fugi apple (add last minute) diced (add last minute)
  • 1 c Celery diced diced
  • 3 unit Green onions chopped
  • 1 can Drained pineapple tidbits
  • 1 T Red wine vinegar
  • 2 c Sour cream
  • 1 c Mayo
  • 2 T Lemon juice
  • 3 T Sugar
  • 1 tsp Thyme leaves
  • 1 unit Salt & Pepper to taste
  • 1 cup Cashews optional

Directions

    Cook and dice chicken breasts.

    Cook bowtie pasta according to package directions.

    Dice red grapes, celery, and green onions.

  4. 4

    Combine cooked chicken, pasta, peppers, celery, green onions, and pineapple tidbits.

    Mix dressing ingredients: red wine vinegar, sour cream, mayo, lemon juice, sugar, and thyme leaves.

    Toss salad with dressing.

    Add fugi apple at the last minute.

    Season with salt and pepper to taste.

    Optional: top with 1 cup cashews.
