Blondie's Caramel Cookie Bar
A buttery bar cookie with brown sugar, and caramel swirled throughout.
Ingredients
- 1 cup butter, slightly cold 2 sticks
- 1 cup brown sugar
- 1 cup white flour
- 1 cup Old fashioned oats
- 1 tsp baking soda
- 1 tsp French grey coarse salt
- 3 tbsp butter
- 3 tbsp cream
- 1 11 oz package caramels
- 1 12 oz package chocolate chips semi-sweet

Mix butter, brown sugar, flour, oats, baking soda and salt together in a bowl using a hand-held or electric mixer.

Spray a 9x13 inch pan with cooking spray. Press 3/4 of dough evenly onto bottom of pan. Bake at 350° for about 15 minutes (until lightly browned). Do not over bake. Take out and set aside.

While crust is baking, melt remaining 3 tablespoons butter with the cream and caramels over low heat on top of stove. Be extra careful and stir constantly, as this can burn easily. Cook until everything is melted and smooth. Pour melted mixture over baked crust.

Sprinkle chocolate chips over caramel mixture. Take pieces of dough and flatten in between palms. Place on top of chocolate caramel mixture as evenly as you can. No need to cover entire top perfectly (there will be gaps between pieces of dough). Put back into oven and continue baking at 350° for another 15 minutes.

Let cool completely before cutting into bars.
