Sausage and Eggs Mountain Man Breakfast
A hearty Dutch oven breakfast casserole with bacon, sausage, potatoes, eggs, and cheese cooked over coals.
Ingredients
- 1/2 lb quality bacon
- 1 8 oz package Jimmy Dean or similar sausage patties
- 1 large onion
- 1 unit bell pepper
- 4 unit russet potatoes
- 1 tbsp mustard powder
- 1 tsp black pepper
- 1 tsp salt
- 12 large eggs
- 1 cup shredded cheese

Put the bacon in a cold 12-inch Dutch oven and place 12 coals underneath. Cook until crisp.

Remove paper towels, drain all but 2 tablespoons bacon grease, and fry the sausage until brown on both sides. Set aside with the bacon.

Add onions and peppers to the oven and cook 2 minutes.

Add the potatoes and cook for 5 more minutes, stirring occasionally.

In a large mixing bowl, whisk the eggs with 1 tablespoon of water, mustard powder, pepper, and salt.

Pour over the potato mix and stir in the bacon. Place the sausage patties on top.

Remove 4 coals from under the oven and put on the lid. Add 12 more to the lid and cook for 8 minutes.

When the eggs are set the way you want, remove the oven from the coals, sprinkle with your favorite grated cheese, and put the lid back on for 5 minutes until the cheese melts.
