Zucchini Brownies
A moist chocolate brownie made with grated zucchini and topped with chocolate frosting.
Ingredients
- 2 cups all-purpose flour
- 1.75 cups sugar
- 0.75 teaspoon salt
- 1.5 teaspoon baking powder
- 0.25 cup cocoa powder
- 0.5 cup canola or coconut oil
- 2 teaspoons vanilla
- 2 cups grated zucchini
- 1 cup chopped walnuts
- 0.25 cup unsalted butter
- 1.5 teaspoon cocoa powder
- 1.5 cups powdered sugar
- 3 tablespoons milk
- 0.5 teaspoon vanilla
- 1 dash salt

Place oven rack in the middle of the oven.

Preheat the oven to 350°F.

In a medium size bowl mix the flour, sugar, salt, baking powder and cocoa powder together with a wooden spoon. Stir in the oil, vanilla and zucchini until completely mixed. Add the nuts if using.

Pour into a 9x13 inch greased baking pan.

Bake for 35 to 40 minutes. Brownies are done when just a little bit of moist brownie adheres to the toothpick. You don't want the toothpick to be completely dry.

Remove from oven and let cool on a wire rack.

Frost with Chocolate Frosting if desired.

In a small bowl or food processor combine butter, cocoa, sugar, milk, vanilla and dash of salt. Stir until smooth.

Spread on top of cooled brownies. Cut into squares.
