Turkey Burgers with Cheddar and Spinach

Ingredients
- 4 ounces wilted spinach
- 1 small onion
- 1 fat clove garlic
- 2 unit spring onions
- 2 TBS good balsamic vinegar
- 2 tsp soy sauce
- 1 tsp fresh lemon juice
- 1/2 tsp mild chili powder
- 35 g strong cheddar cheese
- 30 g fresh soft white bread crumbs
- 1 pound lean ground turkey
- 4 slices medium cheddar cheese
- 1 unit Toasted buns
- 1 unit lettuce
- 1 unit sliced red onions
- 1 unit mayonnaise

Put the spinach, onion, garlic, spring onions, balsamic vinegar, soy sauce, lemon juice and chili powder into the bowl of a small food processor. Blitz together until coarsely chopped.

You don't want it really fine, but you also don't want big chunks of anything.

Put the turkey into a bowl. Scrape the contents of the food processor onto the turkey along with the cheese and bread crumbs. Mix all together well, using a light hand. Gently shape into four flat patties and place them onto a plate.

Chill in the refrigerator for about an hour.

When you are ready to cook them either heat a grill or a grill pan, or a skillet over medium high heat. Lightly coat it with non stick cooking spray.

Add the chilled turkey patties and cook them for 5 to 6 minutes per side, until nicely browned, cooked through and the juices run clear. Top each patty with a slice of cheddar cheese and set aside to melt the cheese while you toast the buns.

Serve the burgers on toaste buns. I like mine with lettuce, mayonnaise and thinly sliced red onions.
