Directions

  1. 1

Bake potatoes and bacon at 400°F 15-30 minutes depending on how crispy you like them.

  2. 2

Make 18 scrambled eggs, add salt and pepper and cottage cheese is optional.

  3. 3

Freshly grated cheese is best so grate some cheddar cheese.

  4. 4

Combine everything together in a large bowl.

  5. 5

Layer mixture onto a tortilla, roll up and wrap it up in parchment paper or plastic wrap.

  6. 6

Store in the fridge or freezer depending on when you want to eat them. I like to store them in the freezer and pull a few out at a time to thaw in the fridge, makes them easier to heat up when they aren't frozen.

  7. 7

Reheat in the oven at 375° for 10 minutes or until cooked thoroughly.

  8. 8

    * would be great with onions, peppers, green chilis, or other breakfast foods of your choice!
